1. Prep ingredients
Preheat the oven to 220C, fan-forced. Line a large oven tray with baking paper. Thinly slice the capsicum and tomato. Thinly slice the chorizo on an angle. Combine the tomato paste, half the Tex-Mex seasoning and a generous drizzle of olive oil in a bowl.
2. Assemble pizzas
Put 2 pita* on the lined tray. Spread with the tomato paste mixture and top with the chorizo, capsicum and tomato. Crumble over the feta.
3. Bake pizzas
Bake the pizzas for 12 mins or until golden.
4. Make Tex-Mex mayo
Meanwhile, put the remaining Tex-Mex seasoning, 2 tbs mayonnaise, 1 tsp honey and a splash of water in a bowl. Season with salt and pepper and stir to combine.
5. Serve up
Drizzle the pizzas with the Tex-Mex mayo, cut into wedges and enjoy!
6. Make it herby
If you have some on hand, scatter over a handful of parsley or coriander leaves for a burst of freshness.
