Air Fryer Crunchy Garlic Salmon
with Cheesy Mash and Beans

150g green beans
2 potatoes
50g parmesan
40g panko breadcrumbs
10g pepper and garlic seasoning
2 Tasmanian salmon fillets

5.3L air fryer (optional)

Instructions

1. Prep ingredients

Preheat the air fryer to 200C (see Don't have an air fryer?). Trim the beans. Peel the potatoes and cut into 3cm chunks. Finely grate the parmesan. Combine the breadcrumbs, one-quarter of the parmesan and 1½ tsp pepper and garlic seasoning (see Cooking tip) in a shallow bowl.

2. Make mash

Bring a small saucepan of water to the boil for the beans. Put the potato in a medium saucepan of cold salted water and bring to the boil. Reduce the heat to medium and cook for 10 mins or until tender. Drain, then mash the potato until smooth. Add the remaining parmesan, 2 tbs milk and 20g butter, season with salt and pepper and stir until combined.

3. Air-fry salmon

Meanwhile, spread the skin of the salmon with 2 tsp mayonnaise, then press the salmon, mayo-side down, into the breadcrumb mixture. Generously spray the salmon all over with olive oil and put in the air-fryer basket, crumb-side up. Air-fry the salmon for 7-9 mins until the crumbs are golden and the salmon is just cooked or cooked to your liking.

4. Cook beans

Add the beans to the pan of boiling water and cook for 2-3 mins until tender. Drain. Combine 1½ tsp pepper and garlic seasoning and 1½ tbs mayonnaise in a bowl.

5. Serve up

Divide the salmon, cheesy mash and beans among plates, spoon over the mayo mixture and enjoy!

6. Don't have an air fryer?

No worries, you can cook the salmon in the oven. Preheat the oven to 200C, fan-forced, and cook the salmon for 8-10 mins until golden and just cooked or cooked to your liking.
