15-Min Spicy Pork Mie Goreng
with Coconut Sambal and Lime

1 lime
coriander
pork stir-fry
20g shredded coconut
300g mixed green vegetables
40g nasi goreng paste
150g egg noodles

2 tsp vegetable oil
2 tsp soy sauce
1 tbs honey
medium saucepan
medium deep frypan

Instructions

1. Prep ingredients

Bring a medium saucepan of water to the boil for the noodles. Finely grate the zest of half the lime, then cut the lime into wedges. Pick the coriander leaves, discarding the stems. Separate the pork stir-fry. Combine the coconut and lime zest in a bowl and season with salt and pepper.

2. Cook pork and veggies

Heat 2 tsp vegetable oil in a medium deep frypan over high heat. Stir-fry the pork and mixed vegetables for 2-3 mins until the pork is cooked through and the veggies are tender. Add the nasi goreng paste and stir-fry for 30 secs or until fragrant. Add in 2 tsp soy sauce, 1 tbs honey and 2 tbs water and stir-fry for 1 minute or until combined.

3. Cook noodles

Meanwhile, cook the noodles in the pan of boiling water for 2 mins or until tender. Drain, then rinse under hot water to prevent the noodles from sticking. Add the noodles to the pork mixture and toss to combine. Remove the pan from the heat. Taste, then season with pepper.

4. Serve up

Divide the pork noodles among bowls and scatter over the coconut sambal and coriander leaves. Serve with the lime wedges and enjoy!
