1. Cook rice
Rinse the rice until the water runs clear. Put in a small saucepan with 250ml (1 cup) water, cover and bring to a simmer over medium heat. Reduce the heat to low and cook for 12 mins or until tender and the water is absorbed. Turn off the heat and stand, covered, for at least 5 mins. Fluff the rice with a fork.
2. Prep ingredients
Meanwhile, crush or finely chop the garlic. Thinly slice the capsicum. Coarsely grate the cheese. Drain the pineapple pieces.
3. Start fried rice
Heat 2 tsp vegetable oil in a medium deep frypan over medium-high heat. Cook the bacon, capsicum and pineapple, stirring, for 5-6 mins until the capsicum is tender. Add the garlic, barbecue seasoning and half the tomato paste* and cook, stirring, for 1 min or until fragrant.
4. Add rice
Add the rice to the bacon mixture and cook, stirring, for 2 mins or until the rice is evenly coated. Remove the pan from the heat. Taste, then season with salt and pepper.
5. Serve up
Divide the fried rice among bowls, scatter over the cheese and enjoy!
6. Make it yours
For even more pizza vibes, melt the cheese in the microwave in 20-sec bursts, stirring each time, until completely melted and runny, then pour over the fried rice.
